Macaroni Salad


1 lb. Elbow Macaroni (uncooked weight)
1 qt. jar Hellman's Mayo
8 oz. jar Sweet Relish
4 tbsp. of juice from jar of sweet gherkins
1 tsp. mustard
2 carrots, grated
12 eggs, hard-boiled
1/2 small onion, grated
dash of paprika

  • boil eggs 25 minutes, drain, refridgerate
  • cook macaroni, drain, put in LARGE mixing bowl
  • add about 2/3 of jar of mayo and mix thoroughly
  • add relish, gherkin juice, mustard, grated carrots, mix
  • add about a tbsp. of grated onion, mix thoroughly
  • dice 11 eggs with egg slicer in 3 directions,
    add and mix thoroughly
  • put into servering bowl and garnish with sliced egg and paprika
