Matzoh Brei


2 large onions
1 lb. matzoh
10 eggs
1/8 tsp. salt
oil


  • fry onions to a golden brown
  • break up matzoh into a large bowl
  • run warm water over matzoh for about 1 minute
  • drain
  • beat 10 eggs, add 1/8 tsp. salt
  • pour into bowl with wet matzoh
  • add fried onions and eggs to matzoh
  • mix thoroughly
  • Fry batter in oil, mixing and breaking up
    as you fry. Fry until golden brown and
    no longer wet.
