Potato Latkes


5 lbs. potatos, grated and drained
2 lg. onions

4 eggs (large)
1/4 to 1/2 tsp. salt


  • mix together
  • add flour, enough to thicken batter,but not thick
  • spoon into hot oil in frying pan with LARGE spoon, but do not deep fry (about 1/2" of oil)
  • fry until golden brown
  • turn over and fry other side
  • drain on paper towels before serving
